These blueberry muffins are a favorite on our little farm and perfect for a chilly morning snack during the school year. Doubling the recipe isn't even a question...
Blueberry Muffins
1/2c butter
1 1/4c sugar
2 eggs
2c flour
2t. baking powder
1/2t salt
1/2c milk
2c blueberries
Cream butter, gradually add sugar. Add eggs one at a time beating well. Mix together the flour, baking powder and salt and add that to the creamed mixture. Mix in milk then fold in the blueberries. Put in greased muffin pans and sprinkle the tops with cane sugar.
Bake at 375 for 25 minutes. Cool before removing!

HeHe, yeah, I keep our family in sweets and treats too. Baking is so much fun! I must get out at least 5 cookbooks each time we go to the library, not including the tons I have already borrowed that I have at home. ;) Lol!
