Pumpkin Bars


~Pumpkin Bars~
  • 4 Eggs
  • 2 C. Pumpkin
  • 2 t. Cinnamon
  • 1 t. Salt
  • 1 t. Vanilla
  • 2 C. Sugar
  • 1 t. Baking Soda
  • 1 C. Oil (can use half applesauce)
  • 2 C. Flour

Mix all ingredients and pour into a greased 9"x13" pan. Bake at 350 for 25 - 30 minutes. When cool, spread on cream cheese frosting!

~Cream Cheese Frosting~

  • 8 oz Cream Cheese
  • 1/2 C. Butter
  • 1 t. Vanilla
  • 2 C. Powdered Sugar
  • 1/2 t. Salt

Spread on bars when cool.

I love the satisfaction of pulling some delicious treat out of the oven after a hard days work of school and learning...a yummy dessert for after dinner! Enjoy!

Mmmm, those look delicious!
Alas, we can't really get pumpkin here without paying an arm and a leg. Sometimes we can get it canned for not too bad of a price, like after Thanksgiving.
I've been longing for some lately, as I browse fall recipes and want to eat pumpkin!

Wow those look really good! I made some last year but I got a rash thing from them so I could be allergic so I'm taking it easy this year.
Also do you guys grind your own wheat? We do and we add that to our bar instead of regular wheat and it works really well!

Oh, I love anything pumpkin. I just picked up some pumpkin ice cream today. This looks delicious. Thanks for sharing. I like the idea of applesauce instead of oil too.
