Several days ago as I was reading my blog (crazy?!), I noticed that recipes shared have been few and far between.
In order to correct that, I would like to share a new favorite dinner that was recently discovered in our family:)
We look for recipes that are: Simple...Yummy...Quick...and relatively Healthy! This recipe fits the bill!!
Vietnam Fried Rice
{our version ~ Serves 10}
1. Put two cups of rice in a saucepan, and cover with just enough water to rise above rice level plus 1 inch. Over high heat, bring to a full boil. Stir through with a fork, loosening grains at the bottom of the pan. Reduce heat to simmer, cover with lid and do not stir or peek for 20 minutes. After 20 minutes, turn off heat and let rice stand covered until ready to serve.
2. Cook 1 lb. of Ground Hamburger or Ground Turkey with 2 chopped Onions {set aside}
3. Mix together {and add to meat/onion mixture}:
- 3 t. Salt
- 2 t. Pepper
- 3 t. Sugar
- 3 T. Soy Sauce
4. Cook 4 Eggs, beaten {set aside}
5. Stir Fry 3-4 cups of Vegetables - mix and match how you like and with whatever you have on hand. I used Broccoli, Leeks and Celery in the picture above...
6. Stir rice, meat/sauce mixture, eggs and vegetables together in a large pan (I use the same pan through the whole process:)
Make sure that the Fried Rice is heated through and serve!

Just so you know Jenna, I simply re-posted a recipe from 2009. It's super easy and they look really fancy and taste great too! :) (The scones) We got it from a Christian Bed and Breakfast cook book.

haha! I like your list of why you like certain recipes! It sounds kind of familiar... Easy, but healthy...hmm...not always easy to get both those together! :)
We'll have to try that recipe, so far all the recipes we've tried from your family we've loved! Especially your banana bread recipe! (you gave it to Melody a couple years ago and she passed it on to us.)
