Last week we started something new. You see, we grew quite fond of having a treat after every meal, and you know that I love to bake! Well...someone...thought that we should go all week without baking/eating dessert and then make something special on Saturday. I thought it would be easy, but it is NOT!! Below is what I made on Saturday - yummy! I guess I'll just be looking at a picture for the rest of the week:)
1 1/2t baking powder
1/2t salt
2/3c butter or margarine
1 1/2t instant coffee granules
2c brown sugar
2 eggs, lightly beaten
1c almonds, coarsely chopped and toasted (optional)
1c white chocolate chips
Combine first 3 ingredients in a medium bowl; set aside. Melt butter in a large saucepan over medium-low heat. Add coffee granules, stirring until dissolved. Remove from heat. Add brown sugar and eggs; stir well. Gradually stir in flour mixture. Add almonds and white choc., stirring well... Spread batter in a lightly greased 13x9" pan. Bake at 350 for 30 minutes. Cool completely in pan. Cut into squares...yields 2 1/2 dozen.

sounds really good! We felt like that too during lent. We did not eat any sweets during lent (over 40 days!)...that was HARD!

Hello Jenna! I am a homeschooling mom and I recently found your website and am really enjoying it. I made these yummy blondies today. I was wondering if the dough is suppose to be real dry? I had to mash it into the pan. It seemed almost too dry, but they still taste very good.
