~ Photo and Recipe from: Weber's Real Grilling~

1T Unsalted Butter, softened
4C Fresh or Thawed Frozen Blueberries, divided
1/2C Sugar, divided
1T Flour
1t Lemon Zest
1T Lemon Juice
1/4t Grated Nutmeg
~
1 1/4C Flour
1/2C Sugar
1 1/2t Baking Powder
1/4t Kosher Salt
1/2t Cinnamon
4T Unsalted Butter, melted
1/2C Milk (I use Raw Goat Milk)
1t Vanilla Extract
1C Heavy Cream, whipped (optional)
~
1. In an ovenproof 10" skillet, melt butter. Add 2 cups of the blueberries with 1/4c sugar, stirring until the mixture has the consistency of jam, about 10 minutes. Remove from heat. Add the remaining 2 cups of blueberries, the remaining 1/4c sugar, flour, lemon zest, lemon juice and nutmeg to the cooked berries and stir. Make sure the whole berries are coated.
~

2. In a mixing bowl, mix flour, sugar, baking powder, salt and cinnamon. Combine the melted butter, milk and vanilla and add to dry ingredients. Drop the batter over the fruit in large spoonfuls.
~
3. Cook over Indirect Medium heat (about 350 degrees) for 20 minutes. Carefully rotate pan and bake for another 25-30 minutes. Let cool then serve.
~
Serves 6-8 ~ This delicious cobbler is intended to be cooked on a grill...perfect for people who's ovens don't work;) However, my aunt made it in her oven cooking at 350 until the topping is crisp~
