Week 5: Meal Challenge

Thank you for bearing with me as I am just getting around to last weeks meal challenge post.

I wasn't able to actually try a new recipe myself this week, but Momma came to the rescue with the delicious Chicken Panini sandwiches that she made (it was a new recipe!) and said I could share it with you:)

Chicken Panini Sandwich's 
(sorry, no picture)
 3T. Mayonnaise
4-1/2t. Grated Parmesan Cheese
1t. Lemon Juice
1/2t. Prepared Pesto
1/4t. Grated Lemon Peel
Dash Pepper
4 Slices Sourdough Bread
1/4 lb. Sliced Chicken (or turkey)
4 Slices cooked Bacon
2 Slices Mozzarella Cheese
2 Slices Red Onion, separated into rings
4 Slices Tomato
2T. Butter, melted

In a small bowl, combine the first six ingredients; spread half over two bread slices. Layer with chicken, bacon, cheese, onion and tomato. Spread remaining mayonnaise mixture over remaining bread slices; place over top. Brush outsides of sandwiches with butter. 
Cook on a griddle for 3-4 minutes (or a grill in the summer!) or until bread is browned and cheese is melted. 

Double or triple for your family size:)
