When I posted about the Meal Challenge, I did happen to forget that I would be at Nana and Grandpa's house sewing and making my very first quilt!! Right now I am sitting at their dining room table ~ resting after a productive and fun day of quilting and more with my Nana.
I just hung up the phone after talking to my dear Momma...and sisters Grace, Anna, Natalie and Laura ~ I miss my family and realize just how much I love everything about my farm-y home. Count your blessings and do not take them for granted. All the joyful chaos and noise is something that I wouldn't trade for anything:)
Anyways, I will update on my special weekend (with pictures!) later.
Please join us this coming week!
Curried Lentil Soup
4c. Hot Water
1 Can (28oz) Crushed Tomato
3 Medium Potatoes, peeled and diced
3 Medium Carrots, sliced
1 Large Onion, chopped
1 Celery Rib, chopped (I used 3)
1c. Dry Lentils
2 Garlic cloves, minced
2 Bay leaves
4t. Curry Powder
1 1/2t. Salt
In a slow cooker, combine all ingredients; stir well. Cover and cook on low for 8 hours or until vegetables and lentils are tender. Discard the bay leaves before serving. Serves 10!
Half of my family really enjoyed this dish, but the younger ones opted for a "no";)
We found that we all liked the soup even more when adding a few Ritz Crackers...and Dad, who doesn't like Curry, liked this!!

Have fun making quilts Jenna! My sisters, grandma and I made 5 sets of quilts for our beds this past summer.
It's so true about the chaos, when it's not around you really start to miss it! :)
I'm looking forward to the rest of the challenge!
Blessings!
Johanna
