Molasses Cookies

2c sugar
1 1/2c oil
2 eggs
1/2c molasses
4c flour
4t baking soda
1T ground ginger
2t cinnamon
1t salt

2 packs white chocolate chips
1/4c shortening

Combine sugar & oil, mix well. Stir in eggs and molasses. In a seperate bowl combine dry ingrediants, and slowly add to the creamed mixture...mix well.
Shape balls and roll them in sugar. Bake @ 350 for 10-12 minutes. Let cool, and then melt white choc. chips and shortening dipping cookies half way in.

Enjoy!

- we use just 1 bag of white choc. chips and 1/8c of shortening because the chips are so expensive...you will have a few cookies left over that aren't dipped.
